Spinach, Beet & Goat Cheese Salad

Who can resist a salad brimming with pickled beets, candied pecans, and goat cheese? If you know me, you know I have a soft spot for beautiful food. This beet salad is not only delicious but visually stunning. The best part is that all the components are easy to prepare yourself, and you can make everything ahead of time, assembling the salad whenever you're ready to eat!
Beets are not only vibrant in colour but also incredibly nutritious, packed with iron, fiber, potassium and vitamin C, to name just a few. Consuming them raw, such as in juice, can provide an energy boost. Plus, the ancient Romans believed beets to be an aphrodisiac!
This salad offers a delightful balance of sweet, crunchy, and tangy flavours. The combination of sweet beets and nuts with goat cheese is perfectly complemented by the greens, creating a harmonious dish. You can serve it as an entrée by adding a protein like salmon or chicken, or enjoy it as a starter, depending on your menu. I'm confident you'll love this beautiful and delicious dish as much as I do!
5 oz. baby spinach
3 Tbsp. good-quality olive oil
1/2 tsp.kosher salt
1/4 tsp. freshly ground black pepper
2 Tbsp. good-quality balsamic vinegar, divided
1/2 cup Aggie's Beet These chopped beets
1/2 cup goat cheese, crumbled
1/2 cup candied pecans
1. Toss spinach with olive oil, salt and pepper in a medium bowl. Taste for seasoning, and add more salt and pepper if desired.
2. Add 1 Tbsp. balsamic vinegar and toss.
3. Add chopped beets, crumbled goat cheese, and pecans to bowl of spinach.
4. Drizzle with final tablespoon of balsamic vinegar.
Candied pecans make a fantastic topping for salads, side dishes, and desserts, but in my house, they rarely last that long. These sweet, crunchy, cinnamon-spiced nuts are so irresistible that they often get eaten as a snack. It's easy to think you'll have just one or two, only to find you've eaten half the batch. Consider yourself warned! Fortunately, if you do end up eating all the nuts meant for your salad, it's quick and easy to make more. This candied pecans recipe requires only 5 ingredients!
1/2 cup light brown sugar
1/4 tsp. ground cinnamon
1/4 tsp. salt
2 Tbsp. water
1 cup pecan halves
1. Combine all ingredients except the pecans in a skillet and cook over medium heat for a minute or two, until the sugar dissolves and the mixture is bubbling.
2. Add the pecans and cook for an additional 3 minutes, stirring to coat in the glaze.
3. Remove from heat, and spread the pecans out on parchment paper to let them cool completely.
4. Break apart , and enjoy!
